My question is how to make the appropriate NS server change. I received the activation email asking me to list NS1.dynu.com,NS2.dynu.com,NS3.dynu.com,NS4.dynu.com,NS5.dynu.com as name servers. Why is it necessary and how do I do it?

Just go to your current domain registrar and change the name servers.

Setting your domain's name servers is letting your domain registrar know where to send DNS requests for your domain to. When you use www.example.com, your computer needs to understand what numerical IP addresses it needs to contact, and this is accomplished through DNS servers.
You use dynamic DNS service to keep your domain name mapped to the most current IP address. This is done by Dynu name servers. You list Dynu name servers so that every time the DNS requests are made, Dynu will return your most current IP address. Of course there are other DNS records.

Does this affect their email fowarding service from the domain registar?
I switched these things over, but now my domain email no longer forwards to me. Or it's delayed.
Any help would be much appreciated.

Check with your registrar what MX records need to be set to use their forwarding service and add those MX records with Dynu.
